Salad Recipe:
>Baby Spinach
>6 Hard-boiled Eggs
>3 chicken breasts sliced (roast bone-in breasts on a cookie sheet in oven @ 350 for 15 minutes then @ 400 for 12 min)
>3 Avocados Sliced
>1 container blueberries
>1 cup pecans
>3 large heads of broccoli blanched then chopped
>Zest of 2 large lemons
Dressing:
>~ 1 cup olive oil
>~ 3 tablespoons of merlot semi-sweet vinegar
>~ Juice of 3 lemons and remaining zest
>~ Salt & Pepper
Asparagus:
Blanch Asparagus ~45 seconds then immediately cool in ice bath. Add olive oil salt and pepper
